Ingredients
  

For the crust
  • 1 cup all-purpose flour For the base of the bars.
  • ½ cup butter, softened Ensure it's softened for easy mixing.
  • ¼ cup granulated sugar Adds sweetness to the crust.
  • ¼ teaspoon salt Enhances the flavors.
For the rhubarb filling
  • 2 cups fresh rhubarb, diced Best when in season.
  • 1 cup granulated sugar Adjust according to sweetness preference.
  • ¼ cup cornstarch Thickens the filling.
  • 1 tablespoon lemon juice Adds brightness to the filling.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, softened butter, sugar, and salt. Mix until you have a cbly dough.
  3. Press this mixture into an even layer at the bottom of a greased 8×8-inch baking pan.
  4. Bake in the preheated oven for 15 minutes.
Making the Filling
  1. While the crust is baking, combine the diced rhubarb, sugar, cornstarch, and lemon juice in a saucepan over medium heat.
  2. Cook until the mixture starts to thicken, stirring occasionally.
Baking the Bars
  1. Once the crust has baked for 15 minutes, remove it from the oven and pour the rhubarb filling over the hot crust, spreading it evenly.
  2. Return the pan to the oven and bake for an additional 25-30 minutes or until the filling is bubbly and the edges are slightly golden.
  3. Allow the bars to cool completely in the pan before slicing them into squares.

Notes

Store in an airtight container in the refrigerator for up to four days or freeze for up to three months. Consider serving with ice cream or a drizzle of glaze for extra flair.
