Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine flour, softened butter, sugar, and salt. Mix until you have a cbly dough.
- Press this mixture into an even layer at the bottom of a greased 8×8-inch baking pan.
- Bake in the preheated oven for 15 minutes.
Making the Filling
- While the crust is baking, combine the diced rhubarb, sugar, cornstarch, and lemon juice in a saucepan over medium heat.
- Cook until the mixture starts to thicken, stirring occasionally.
Baking the Bars
- Once the crust has baked for 15 minutes, remove it from the oven and pour the rhubarb filling over the hot crust, spreading it evenly.
- Return the pan to the oven and bake for an additional 25-30 minutes or until the filling is bubbly and the edges are slightly golden.
- Allow the bars to cool completely in the pan before slicing them into squares.
