- In a large pot, bring salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, brown the ground beef (or turkey). Ensure the meat is fully cooked, breaking it apart with a spatula as it cooks.
- Stir in the taco seasoning and add the black beans, corn, and diced tomatoes. Mix thoroughly and simmer for about 5 minutes, allowing the flavors to meld.
- In a large mixing bowl, combine the cooked pasta, meat mixture, sour cream, and one cup of shredded cheese. Stir well until everything is evenly coated.
- Spoon the mixture into a greased 9x13-inch baking dish, spreading it evenly. Top with the remaining cheese and salsa.
- Preheat the oven to 350°F (175°C) and bake for about 20-25 minutes, or until the cheese is bubbly and slightly golden.
- Once out of the oven, let it sit for a few minutes before serving. Top with your choice of sliced avocados, additional sour cream, or fresh cilantro.
Notes
Feel free to customize by swapping ground beef for chicken or using meat alternatives for a vegetarian version. For extra heat, add diced jalapeños or crushed red pepper to the meat mixture. This pasta bake can be assembled a day in advance and stored in the refrigerator.
