  • 2 tablespoons Taco seasoning Purchase pre-made or create your own blend.
  • 1 cup Breadcrumbs Whole wheat or regular breadcrumbs work beautifully.
  • 1 large Egg Helps bind the loaf together.
  • 1 medium Chopped onion Adds moisture and flavor.
  • 1 cup Shredded cheese Cheddar or Mexican blend for that gooey topping.
  • 1 cup Doritos, crushed For a crunchy finish.
  • optional Sour cream For topping.

Preparation
  1. Preheat the Oven: Set your oven to 350°F (175°C) to prepare for your meaty creation.
  2. Combine Ingredients: In a large mixing bowl, combine your ground meat, taco seasoning, breadcrumbs, egg, and chopped onion. Mix lightly but thoroughly to avoid overworking the meat.
  3. Shape the Loaf: Press the meat mixture into a greased loaf pan, making sure to pack it well.
  4. Add the Cheese: Sprinkle half of your shredded cheese evenly over the top of the meat mixture.
  5. Bake: Place the loaf in your preheated oven and bake for about 45 minutes, allowing the flavors to meld perfectly.
  6. Final Touch: Remove from the oven and sprinkle crushed Doritos and the remaining cheese on top. Return to the oven for an additional 10 minutes, until the cheese is bubbly and golden.
  7. Serve: Let the meatloaf rest for a few minutes before slicing. Add a dollop of sour cream if desired and enjoy!

Notes

To store, cool completely before transferring to an airtight container. Lasts in the refrigerator for about 3-4 days or freeze for up to 3 months.
