- Bring a pot of salted water to boil and add the elbow macaroni. Cook according to package instructions until al dente, then drain and set aside.
- In a large skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain any excess grease.
Cooking
- Sprinkle the taco seasoning over the browned meat, add the diced tomatoes, and stir to combine. Cook for a few minutes to allow the flavors to meld.
- Add the cooked macaroni to the skillet and mix well. Pour in the milk and half of the cheese, stirring until the cheese is melted and the dish becomes creamy.
- Top with the remaining cheese and optional toppings, allowing it to melt slightly before serving. Enjoy!
Notes
For a healthier version, substitute ground turkey or chicken for beef, or use whole wheat or gluten-free pasta. To add heat, include diced jalapeƱos or cayenne pepper during cooking. Store leftovers in an airtight container in the refrigerator for up to 3 days, reheat with a splash of milk.
