  • 8 ounces elbow macaroni Cook according to package instructions.
  • 1 pound ground beef or turkey Choose ground beef for a richer flavor.
  • 1 ounce taco seasoning About 1 packet.
  • 1 cup diced tomatoes Canned or fresh; add for moisture and flavor.
  • 1 cup shredded cheese Cheddar, Monterey Jack, or any blend.
  • 1 cup milk Adds creaminess to the dish.
Optional Toppings
  • to taste chopped green onions Fresh topping for added flavor.
  • to taste diced bell peppers Add for extra crunch and sweetness.
  • to taste fresh herbs Like cilantro or parsley.

Method
 

Preparation
  1. Bring a pot of salted water to boil and add the elbow macaroni. Cook according to package instructions until al dente, then drain and set aside.
  2. In a large skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain any excess grease.
Cooking
  1. Sprinkle the taco seasoning over the browned meat, add the diced tomatoes, and stir to combine. Cook for a few minutes to allow the flavors to meld.
  2. Add the cooked macaroni to the skillet and mix well. Pour in the milk and half of the cheese, stirring until the cheese is melted and the dish becomes creamy.
  3. Top with the remaining cheese and optional toppings, allowing it to melt slightly before serving. Enjoy!

Notes

For a healthier version, substitute ground turkey or chicken for beef, or use whole wheat or gluten-free pasta. To add heat, include diced jalapeƱos or cayenne pepper during cooking. Store leftovers in an airtight container in the refrigerator for up to 3 days, reheat with a splash of milk.
