  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butterscotch chips Adds a rich butterscotch flavor.
Topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Mix in the eggs one at a time, followed by the vanilla extract, ensuring everything is well blended.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
Mixing and Baking
  1. Gradually mix the dry ingredients into the wet ingredients until just combined. Don’t over-mix!
  2. Fold in the butterscotch chips to evenly disperse them throughout the dough.
  3. Scoop tablespoon-sized portions of cookie dough onto the prepared baking sheet, leaving space in between each. Press a few extra butterscotch chips on top, then sprinkle lightly with flaky sea salt.
  4. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
  5. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For a richer flavor, consider adding a teaspoon of brown butter. Experiment with adding a touch of cinnamon for extra warmth. Store leftover cookies in an airtight container or freeze for longer storage.
