  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn
  • 1 jalapeño, sliced
  • 1 avocado, diced
  • 1/4 cup sour cream or Greek yogurt
  • 1/4 cup salsa
  • Chopped green onions or cilantro for garnish

Preparation
  1. Preheat your oven to the temperature specified on the sweet potato tater tots packaging, usually around 425°F (220°C).
  2. While the tater tots are baking, rinse and drain the black beans, slice the jalapeño, and dice the avocado.
Cooking
  1. Spread the sweet potato tater tots evenly on a baking sheet. Bake in the preheated oven according to the package instructions, typically around 20-25 minutes, until they are crispy and golden brown.
  2. Once the tater tots are ready, remove them from the oven. On top of the crispy tater tots, sprinkle the shredded cheese evenly, ensuring full coverage. Then, layer on the black beans, corn, and sliced jalapeños.
  3. Return the baking sheet to the oven for an additional 5 minutes or until the cheese is melted and bubbly.
  4. Once out of the oven, top with diced avocado, sour cream (or Greek yogurt), salsa, and sprinkle with green onions or cilantro. Serve immediately and enjoy!

Notes

Feel free to swap the shredded cheese for a dairy-free version or try using different beans like pinto or chickpeas for added variety. Store any leftovers in an airtight container in the fridge for 2-3 days, and reheat in the oven at 350°F (175°C) to restore crispiness.
