  • 2 large sweet potatoes Sliced into 1/2-inch rounds
  • 8 oz brie cheese Rind removed
  • 1/4 cup heavy cream
  • 1/2 cup cranberries Dried or fresh
  • 2 tablespoons honey or maple syrup
  • to taste Salt and pepper
  • 2 tablespoons olive oil

Method
 

Preparation of Sweet Potatoes
  1. Preheat your oven to 400°F (200°C). Slice the sweet potatoes into 1/2-inch rounds. Place them on a baking sheet and drizzle with olive oil, then sprinkle with salt and pepper to taste.
Roast Sweet Potatoes
  1. Roast the sweet potato rounds in the oven for about 20-25 minutes, flipping halfway through until they are golden brown and tender.
Whip the Brie
  1. While the sweet potatoes are roasting, prepare the whipped brie. In a mixing bowl, combine the brie cheese and heavy cream. Using a hand mixer, whip until smooth and creamy.
Prepare Cranberries
  1. If using fresh cranberries, you can sauté them briefly in a small pan with a drizzle of honey or maple syrup to enhance their flavor. Otherwise, dried cranberries can be used as-is.
Assemble the Rounds
  1. Once the sweet potato rounds are done, remove them from the oven and let them cool slightly. Top each round with a generous dollop of whipped brie and a spoonful of cranberries.

  1. Drizzle a bit of honey or maple syrup over the top for an extra touch of sweetness, and serve while they’re still warm!

Notes

For substitutions, cream cheese can be used instead of brie. Ensure sweet potato slices are even for consistent cooking. Store leftovers in an airtight container for up to 3 days and reheat in the oven at 350°F (175°C) for 10-12 minutes.
