  • 2 cups mashed sweet potatoes (about 2 large sweet potatoes) Opt for bright orange sweet potatoes for the best flavor.
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 3 large eggs
  • 1 cup evaporated milk
  • 1 teaspoon vanilla extract
  • 1 unbaked pie crust (store-bought or homemade) Prepare the crust ahead of time for best results.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Boil or steam the sweet potatoes until tender. Then, peel and mash them until smooth.
  3. In a large mixing bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, salt, and spices. Stir well.
  4. Beat in the eggs, followed by the evaporated milk and vanilla extract until smooth.
  5. Pour the filling into the unbaked pie crust, smoothing it out for an even layer.
  6. Place in the oven and bake for about 55 to 60 minutes, or until a knife inserted in the center comes out clean.
  7. Allow the pie to cool before slicing. Serve warm or chilled with whipped cream.

Notes

Serve with whipped cream or caramel drizzle for an extra touch. Pair with roasted ham or a light salad. Refrigerate leftovers for up to 4 days or freeze individual slices for up to 2 months.
