Preparation
- Preheat your oven to 350°F (175°C).
- Boil or steam the sweet potatoes until tender. Then, peel and mash them until smooth.
- In a large mixing bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, salt, and spices. Stir well.
- Beat in the eggs, followed by the evaporated milk and vanilla extract until smooth.
- Pour the filling into the unbaked pie crust, smoothing it out for an even layer.
- Place in the oven and bake for about 55 to 60 minutes, or until a knife inserted in the center comes out clean.
- Allow the pie to cool before slicing. Serve warm or chilled with whipped cream.
