Preparation
- Peel and cube the sweet potatoes. Place them in a large pot, cover with water, and bring to a boil. Cook until tender, about 15-20 minutes.
- Drain the sweet potatoes and return them to the pot. Mash until smooth, adding in the softened butter, brown sugar, maple syrup, vanilla extract, cinnamon, and salt. Stir until well combined.
- Preheat your oven to 350°F (175°C). Transfer the mashed sweet potato mixture into a greased 2-quart casserole dish and smooth the top with a spatula.
Topping
- In a small bowl, combine chopped pecans, brown sugar, and a drizzle of maple syrup. Mix well and sprinkle evenly over the sweet potato layer. If desired, add mini marshmallows on top.
Baking
- Place the casserole in the preheated oven and bake for about 30-40 minutes, until everything is heated through and the topping is bubbly and golden.
Serving
- Allow to cool slightly before serving. Enjoy this delicious dish warm with your loved ones!
Notes
Make this dish ahead of time! You can prepare the sweet potato mixture the night before and store it in the refrigerator. Just add the topping when you’re ready to bake. Avoid over-mashing the sweet potatoes for a contrasting texture.
