Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Dice the sweet potatoes into bite-sized cubes and halve the Brussels sprouts.
  3. In a large bowl, toss the diced sweet potatoes and halved Brussels sprouts with olive oil, garlic powder, salt, and pepper until well coated.
  4. Spread the mixture evenly on a large baking sheet in a single layer.
Cooking
  1. Roast in the preheated oven for 20-25 minutes, stirring halfway through.
  2. If using fried eggs, cook them in a skillet while the vegetables roast.
  3. Once the sweet potatoes are golden and the Brussels sprouts are tender, remove from the oven. Serve hot topped with fried eggs if desired.

Notes

For added flavor, experiment with spices like paprika or cumin. To achieve a crisper texture, broil for the last few minutes.
