  • 2 cups fresh or frozen cherries, pitted
  • 1/2 cup sugar
  • 1 tablespoon lemon juice
  • 1/4 cup water
  • 1 teaspoon vanilla extract (optional) Add in the last minutes of cooking for extra flavor.

Preparation
  1. If using fresh cherries, rinse them well and remove the pits. For frozen cherries, you can use them straight from the freezer.
Cooking
  1. In a medium saucepan, combine the cherries, sugar, lemon juice, and water. Stir gently until the sugar begins to dissolve.
  2. Over medium heat, bring the mixture to a simmer. Stir occasionally and allow it to simmer for about 15-20 minutes or until the cherries soften and the mixture thickens slightly.
  3. If using vanilla, stir it in during the last couple of minutes of cooking.
Serving
  1. Once the compote reaches the desired consistency, remove it from the heat. Let it cool a bit before serving. You can serve it warm or store in the fridge for later.

Notes

Store in an airtight container in the fridge for up to one week. For longer storage, freeze for up to three months. Reheat on the stove or microwave with a splash of water if needed.
