Ingredients
  

Dry Ingredients
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup buttermilk
  • 1/4 cup vegetable oil
  • 2 large eggs
Mix-ins
  • 1 cup sweet corn drained if canned
  • 1/2 cup shredded sharp cheddar cheese
For Serving
  • to taste honey or maple syrup optional

Method
 

Preparation
  1. Preheat your waffle maker according to the manufacturer’s instructions.
  2. In a large bowl, combine the cornmeal, all-purpose flour, sugar, baking powder, and salt. Whisk them together until well blended.
  3. In a separate bowl, whisk together the buttermilk, vegetable oil, and eggs until fully incorporated.
  4. Pour the wet ingredients into the dry ingredients. Mix gently until just combined; be careful not to overmix. Gently fold in the sweet corn and shredded cheese.
Cooking
  1. Lightly grease the waffle maker, and scoop about 1/4 cup of the batter into the center of the plates.
  2. Close the lid and cook for 3-5 minutes, or until the steam is minimal and the waffles are golden brown.
  3. Carefully remove the waffle bites from the maker and serve immediately, drizzled with honey or syrup if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. They can also be frozen for up to a month. Reheat in a toaster oven or microwave. Consider adding herbs or spices for extra flavor.
