Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas until smooth and stir in the melted butter.
  3. Sprinkle the baking soda and salt over the banana mixture, and mix it in.
  4. Mix in the sugar, beaten egg, and vanilla extract until combined.
  5. Gently fold in the flour, being careful not to overmix.
  6. Stir in the chocolate chips, adding more on top if desired.
  7. Transfer the batter to the prepared loaf pan and smooth the top.
Baking
  1. Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow to cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Store tightly wrapped at room temperature for 2-3 days or in the refrigerator for up to a week. For longer storage, freeze individual slices wrapped in plastic.
