- Start by draining and rinsing the butter beans under cool water to remove any excess sodium.
- In a large skillet, pour in the olive oil and place over medium heat until it shimmers.
- Add the minced garlic to the skillet and sauté for about 1-2 minutes until fragrant but not browned.
- Gently stir in the butter beans, salt, and pepper. Cook for about 5 minutes, allowing the beans to warm up.
- Pour in the fresh lemon juice and toss in the chopped dill. Stir continuously for another 2-3 minutes until combined.
- Once everything is heated through, take off the heat and serve warm. Optional: Top with additional dill or a sprinkle of feta cheese.
Notes
If you don't have fresh dill, you can use dried dill – just cut the amount to about 1 tablespoon. Ensure your skillet is hot enough before adding garlic to optimize flavors. Avoid overcooking garlic to prevent bitterness.
