  • 1 medium to large Pumpkin seeds (from 1 medium to large pumpkin)
  • 1-2 tablespoons Olive oil
  • to taste Sea salt
  • Optional seasonings: smoked paprika, garlic powder, cinnamon, or any spices you love Feel free to experiment with different spices!

Preparation
  1. Once you’ve carved your pumpkin, carefully scoop out the seeds and stringy insides. Place the seeds into a bowl of cold water. Use your hands to separate the seeds from the pulp, rinsing them well in the process.
  2. Drain the seeds and lay them out on a clean kitchen towel or paper towels, patting them dry. The drier they are, the crisper they will become when roasted!
Seasoning and Roasting
  1. Preheat your oven to 350°F (175°C). In a bowl, toss the cleaned pumpkin seeds with olive oil and your choice of seasonings until they are well coated.
  2. Spread the seeds in a single layer on a baking sheet lined with parchment paper. Pop them into the preheated oven and roast them for about 15-20 minutes. Be sure to stir them around halfway through to ensure even roasting!
Serving
  1. Once golden and crispy, remove the seeds from the oven, let them cool slightly, and then enjoy your Spooky Roasted Pumpkin Seeds either warm or at room temperature!

Notes

Store leftovers in an airtight container at room temperature for up to two weeks. Freeze them for up to three months for a quick snack!
