  • 1 lb fresh salmon fillet, skin removed
  • 1 cup fresh spinach, chopped
  • 1 cup cream cheese, softened
  • 1/2 cup grated cheese (e.g., mozzarella, cheddar, or feta)
  • 1 sheet of puff pastry, thawed
  • 1 large egg, beaten (for egg wash)
  • Salt and pepper, to taste
  • Optional: garlic powder, onion powder, or herbs for seasoning

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine chopped spinach, softened cream cheese, and grated cheese. Season with salt, pepper, and any additional herbs or spices. Mix until well blended.
  3. Place fresh salmon fillet on a parchment-lined baking sheet. Season both sides with salt and pepper, then spread the creamy spinach mixture over the salmon.
  4. Roll out the puff pastry large enough to encase the salmon. Place the salmon (with the filling) in the center of the pastry, fold over, and pinch the seams to seal. Trim excess pastry if needed.
  5. Brush the top of the pastry with the beaten egg.
Baking
  1. Place the wrapped salmon on a baking sheet and bake for 20-25 minutes, or until the pastry is golden brown and flaky.
  2. Allow to cool for a few minutes before slicing. Serve with a light salad or your favorite sides.

Notes

Ensure puff pastry is thawed but still cold for best flakiness. Experiment with cheese choices and herbs for added flavor. Avoid overcooking the salmon.
