Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the potatoes, then cut them into bite-sized cubes.
  3. In a large mixing bowl, combine the cubed potatoes with olive oil, minced garlic, paprika, cumin, chili powder, salt, and pepper. Ensure all the pieces are well-coated.
  4. Spread the seasoned potatoes onto a baking sheet in a single layer.
Cooking
  1. Place the baking sheet in the oven and roast the potatoes for about 30 minutes, tossing halfway through.
  2. Check for doneness; they should be golden and crispy. If desired, roast for an additional 5-10 minutes.
Serving
  1. Remove the potatoes from the oven, let cool for a few minutes, and garnish with chopped cilantro or parsley.
  2. Serve with lemon wedges.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days, or freeze for up to a month. Reheat on a baking sheet in the oven at 400°F (200°C) for about 10–15 minutes.
