  • 3 pieces ripe pears, sliced Use Bosc or Anjou pears for optimal taste.
  • 1 cup brown sugar
  • 1/2 cup unsalted butter Melted for the caramel topping.
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg Feel free to add cardamom for extra flavor.
Cake Batter
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

Method
 

Preparation
  1. Preheat your oven to 350°F (176°C).
  2. Slice your ripe pears and set them aside.
  3. In a skillet over medium heat, melt the unsalted butter. Add the brown sugar, cinnamon, and nutmeg, stirring until the mixture becomes syrupy (about 5 minutes). Pour this mixture into your greased cake pan and arrange the pear slices on top.
Baking
  1. In a large bowl, beat the granulated sugar and eggs until smooth. Add milk and vanilla extract, mixing well. Fold in flour, baking powder, and salt until just combined.
  2. Gently pour the batter over the arranged pears in the cake pan.
  3. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
Cooling and Serving
  1. Once baked, let it cool in the pan for about 15 minutes.
  2. Carefully flip the cake onto a serving plate to reveal the beautiful pear topping.

Notes

Store leftovers covered in the refrigerator for up to 3 days. Reheat in the microwave for about 10-15 seconds or warm in the oven at 350°F for 10 minutes to revive flavors.
