Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine peanut butter, Greek yogurt, brown sugar, granulated sugar, and vanilla extract. Mix until creamy.
- Gradually add baking soda, salt, and flour to the wet mixture. Stir until just combined.
- Fold in chocolate chips if using.
- Scoop rounded tablespoons of dough onto a parchment-lined baking sheet, spacing them apart.
Baking
- Bake in the preheated oven for 10 to 12 minutes, until lightly golden around the edges.
- Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For nut-free options, substitute peanut butter with sunflower seed butter. Keep an eye on baking time; for softer cookies, remove when slightly underbaked.
