  • 1 cup peanut butter
  • 1 cup Greek yogurt Ensure well-mixed and creamy for best results.
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups all-purpose flour
  • 1/2 cup chocolate chips (optional) For added flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine peanut butter, Greek yogurt, brown sugar, granulated sugar, and vanilla extract. Mix until creamy.
  3. Gradually add baking soda, salt, and flour to the wet mixture. Stir until just combined.
  4. Fold in chocolate chips if using.
  5. Scoop rounded tablespoons of dough onto a parchment-lined baking sheet, spacing them apart.
Baking
  1. Bake in the preheated oven for 10 to 12 minutes, until lightly golden around the edges.
  2. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For nut-free options, substitute peanut butter with sunflower seed butter. Keep an eye on baking time; for softer cookies, remove when slightly underbaked.
