Filling Ingredients
  • 2 cups cooked shredded chicken Use rotisserie chicken for convenience.
  • 1 cup shredded cheese (like Monterey Jack or cheddar) For topping.
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup salsa
  • 1 cup sour cream Half for filling and half for the sauce.
  • 8 large flour tortillas
  • 1 teaspoon taco seasoning
  • to taste Chopped fresh cilantro (optional, for garnish)
Sauce Ingredients
  • 1/2 cup sour cream For the sauce.
  • 1/2 cup salsa For the sauce.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the cooked shredded chicken, black beans, corn, salsa, sour cream, and taco seasoning. Stir until well mixed.
  3. Take a tortilla and spoon about 1/2 cup of the filling into the center. Fold in the sides of the tortilla and roll it up tightly. Repeat with the remaining tortillas and filling.
  4. In a separate bowl, mix 1/2 cup of sour cream with 1/2 cup of salsa until smooth. This sauce will top the burritos.
Baking
  1. Place the assembled burritos seam-side down in a greased baking dish. Pour the sauce over the top and sprinkle with the shredded cheese. Cover with aluminum foil and bake for 25-30 minutes.
  2. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.
  3. Garnish with fresh cilantro if desired and serve hot.

Notes

Feel free to customize the filling with your favorite vegetables like bell peppers or zucchini. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze individually wrapped for up to 2 months.
