- In a mixing bowl, combine soy sauce, sugar, mirin, minced ginger, minced garlic, and smoked paprika. Stir until the sugar dissolves.
- Add the chicken to the marinade. Cover and let it marinate for at least 15 minutes for the best flavor. You can also let it sit in the fridge for up to 2 hours for a deeper taste.
- Thread the marinated chicken pieces onto skewers, ensuring they are spaced evenly.
