  • 2 tablespoons sugar

  • 1 tablespoon ginger, minced
  • 1 tablespoon garlic, minced
  • 1 teaspoon smoked paprika

Preparation
  1. Start by cutting the chicken thighs into 1-inch pieces. Feel free to remove the skin if you prefer a leaner option.
  2. In a mixing bowl, combine soy sauce, sugar, mirin, minced ginger, minced garlic, and smoked paprika. Stir until the sugar dissolves.
  3. Add the chicken to the marinade. Cover and let it marinate for at least 15 minutes for the best flavor. You can also let it sit in the fridge for up to 2 hours for a deeper taste.
  4. Thread the marinated chicken pieces onto skewers, ensuring they are spaced evenly.
  5. Preheat your grill to medium-high heat. If using a grill pan, make sure it’s well heated to achieve that beloved charred surface.
  6. Place the skewers on the grill and cook for about 5-7 minutes on each side, or until the chicken reaches an internal temperature of 165°F. Baste with leftover marinade for extra flavor.
  7. Once cooked, remove the skewers from the grill, garnish with freshly chopped green onions, and serve warm.

Notes

For a different twist, you can substitute chicken thighs with chicken breast or even tofu for a vegetarian option. The longer you marinate, the more flavorful your chicken will be. Ensure your grill is well-oiled to prevent sticking.
