Ingredients

  • 1 cup lentils (any variety you prefer)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1-2 chipotle peppers in adobo sauce, chopped
  • 1 teaspoon smoked paprika
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • tablespoons Olive oil
  • Fresh cilantro for garnish (optional)

Method
 

Cooking Instructions
  1. Heat about 2 tablespoons of olive oil in a large pot over medium heat. Add the diced onion and sauté for about 5-7 minutes until translucent.
  2. Stir in the minced garlic and cook for another minute until fragrant.
  3. Toss in the chopped chipotle peppers and smoked paprika. Stir into the onion and garlic mixture, allowing the spices to release their aromas for about 2 minutes.
  4. Rinse the lentils under cold water, then add them to the pot along with the vegetable broth.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 20-25 minutes, or until the lentils are tender but not mushy.
  6. Once cooked, add salt and pepper to taste. If you’d like a creamier texture, mash some of the lentils slightly with the back of a spoon.
  7. Ladle into bowls and garnish with fresh cilantro on top if desired. Enjoy!

Notes

You can swap lentils for chickpeas or black beans. Monitor simmering lentils to prevent overcooking. Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months. Reheat with a splash of vegetable broth.
