  • 1 cup lentils (red or green), rinsed
  • 1 unit onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 2 tablespoons chipotle in adobo sauce
  • 1 teaspoon smoked paprika

  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • to garnish Fresh cilantro

Method
 

Cooking Instructions
  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Then, add the minced garlic and continue cooking for another minute until fragrant.
  2. Stir in the rinsed lentils, diced tomatoes, chipotle in adobo sauce, smoked paprika, salt, and pepper. Mix everything well.
  3. Gradually add the vegetable broth, stirring to combine all the ingredients. Bring it to a gentle boil.
  4. Reduce the heat and let the lentils simmer for about 25-30 minutes or until they are tender and infused with all the wonderful flavors.
  5. Once cooked, taste and adjust the seasoning, adding more salt or chipotle if you prefer an extra kick.
  6. Ladle the lentils into bowls and garnish with fresh cilantro. Enjoy them warm!

Notes

For variations, consider adding chopped bell peppers or sautéed spinach. This dish stores well in an airtight container for up to 5 days in the refrigerator or 3 months in the freezer. Reheat on the stovetop with a splash of water or broth.
