- In a large pot, heat a drizzle of olive oil over medium heat.
- Add the diced onion and minced garlic. Sauté for about 3-4 minutes until softened and fragrant.
- Toss in the sliced chorizo and cook for another 5 minutes, allowing it to release its flavorful oils.
- Stir in the diced red bell pepper and cook for an additional 2-3 minutes, adding a pop of color to your stew.
- Pour in the drained butter beans and the diced tomatoes. Sprinkle in the smoked paprika, salt, and pepper. Give everything a good stir.
- Reduce the heat and allow the stew to simmer for 15-20 minutes, letting all the flavors meld together beautifully.
- Spoon the stew into bowls, sprinkle with fresh parsley, and enjoy the fruits of your labor!
Notes
If you can’t find Halal chorizo, feel free to swap it for Halal turkey sausage or chicken sausage. Keep an eye on the simmering time—letting it bubble for too long can dry out your beans. Be mindful not to overcook the beans—they should be tender but not mushy.
