  • 2 lbs beef stew meat Cut into bite-sized pieces
  • 2 large sweet potatoes, peeled and diced Ensure even sizes for cooking
  • 4 carrots, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil For browning the beef

Preparation
  1. Start by chopping the sweet potatoes, carrots, onion, and garlic. Set them aside.
Browning the Beef
  1. Heat olive oil in a large skillet over medium-high heat. Add the beef stew meat, season with salt and pepper, and brown on all sides. Feel free to skip this step if short on time.
Combine Ingredients
  1. In the slow cooker, add the browned beef, diced sweet potatoes, sliced carrots, chopped onion, and minced garlic.
  2. Pour in the beef broth and add the tomato paste, thyme, and paprika. Stir gently to combine.
Cooking
  1. Cover and cook on low for about 6-8 hours or on high for about 4-5 hours.
Serving
  1. Once your stew is done, give it a good stir and ladle it into bowls. Don’t forget those delightful toppings like fresh parsley or olive oil!

Notes

Leftovers can be stored in an airtight container for up to 4 days or frozen for longer storage. Reheat in microwave or on stovetop, adding broth if necessary.
