- Start by chopping the sweet potatoes, carrots, onion, and garlic. Set them aside.
Browning the Beef
- Heat olive oil in a large skillet over medium-high heat. Add the beef stew meat, season with salt and pepper, and brown on all sides. Feel free to skip this step if short on time.
Combine Ingredients
- In the slow cooker, add the browned beef, diced sweet potatoes, sliced carrots, chopped onion, and minced garlic.
- Pour in the beef broth and add the tomato paste, thyme, and paprika. Stir gently to combine.
Cooking
- Cover and cook on low for about 6-8 hours or on high for about 4-5 hours.

- Once your stew is done, give it a good stir and ladle it into bowls. Don’t forget those delightful toppings like fresh parsley or olive oil!
