  • 4 pieces boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup minced onion
  • 4 cloves garlic, minced
  • 2 tablespoons lemon juice, freshly squeezed if possible
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • to taste salt and pepper
  • optional Chopped fresh parsley for garnish

Method
 

Preparation
  1. Season the chicken breasts with salt and pepper.
  2. In your slow cooker, add the long-grain white rice and spread it evenly across the bottom.
  3. Pour in the chicken broth, followed by the minced onions and garlic. Stir to combine.
  4. Arrange the seasoned chicken breasts on top of the ingredients.
Cooking
  1. Drizzle the lemon juice over everything and sprinkle the thyme and rosemary on top.
  2. Cover your slow cooker and set it to low for 4-6 hours or high for 2-3 hours.
Finishing Touches
  1. Once done, shred the chicken with two forks right in the slow cooker.
  2. Stir everything together and adjust seasoning to taste.
Serving
  1. Ladle the chicken and rice into bowls, garnish with fresh parsley if desired, and enjoy.

Notes

Add fresh veggies for a twist; ensure enough liquid for cooking. Leftovers can be stored for up to 4 days in the fridge.
