  • 1/2 cup honey
  • 4 cloves garlic, minced
  • 1/3 cup soy sauce (or a Halal-certified alternative)
  • 1/2 cup vegetable broth

  • 1 cup bell peppers, sliced (any colors you prefer)
  • 1 cup broccoli florets
  • 1 cup carrots, sliced
  • 1 tbsp cornstarch (optional, for thickening the sauce)

Method
 

Preparation
  1. Start by placing your chicken thighs in the bottom of your slow cooker. Make sure they are spread out evenly for even cooking.
  2. In a separate bowl, combine honey, minced garlic, soy sauce, and vegetable broth. This mixture is the heart of our dish, providing a sweet and savory sauce.
  3. Pour the honey garlic sauce over the chicken in the slow cooker, gently coating the chicken.
  4. Layer your sliced bell peppers, broccoli florets, and carrots on top of the chicken.
Cooking
  1. Set your slow cooker to low for 6 to 8 hours, or on high for 3 to 4 hours until the chicken is tender.
  2. If you prefer a thicker sauce, mix a tablespoon of cornstarch with a tablespoon of cold water and stir this into the slow cooker for the last 30 minutes.
  3. Once cooked, shred the chicken with two forks or serve it whole.
  4. Garnish with chopped green onions and sesame seeds.

Notes

Feel free to swap out vegetables and don’t overfill the slow cooker to ensure proper cooking. Leftovers can be stored in the refrigerator for up to 3 days or frozen for 3 months.
