  • 4 pieces chicken breasts Skinless and boneless
  • 14.5 oz can diced tomatoes
  • 1 cup heavy cream Can substitute with coconut milk for a lighter option
  • 1 cup fresh basil, chopped Add towards the end of cooking
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning Plus extra for seasoning the chicken
  • to taste Salt and pepper For seasoning the chicken

Method
 

Preparation
  1. Season the chicken breasts with salt, pepper, and Italian seasoning.
  2. In the bottom of the slow cooker, pour in the diced tomatoes.
  3. Place the seasoned chicken breasts on top of the diced tomatoes.
  4. In a bowl, mix the heavy cream, minced garlic, and additional Italian seasoning, then pour over the chicken.
Cooking
  1. Set the slow cooker to low and cook for 6-7 hours, or 3-4 hours on high.
  2. About 15 minutes before serving, add the chopped fresh basil.
Serving
  1. Plate the chicken and spoon the sauce over, then enjoy!

Notes

For storage, leftovers can be kept in the fridge for 3-4 days or frozen for up to three months. Reheat on stovetop or microwave with a splash of water or cream to maintain creaminess.
