  • 2 lbs boneless skinless chicken breasts
  • 28 oz can crushed tomatoes
  • 1 cup heavy cream or Halal-friendly alternative
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon dried basil or 1/4 cup fresh basil, chopped
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • Optional Grated Parmesan cheese for serving

Preparation
  1. Chop the onion and mince the garlic. Set them aside.
Cooking
  1. Place the chicken breasts at the bottom of the slow cooker.
  2. Pour the crushed tomatoes over the chicken, followed by the chopped onion, minced garlic, dried basil, Italian seasoning, salt, and pepper.
  3. Cover the slow cooker and cook on low heat for 6-8 hours or high heat for 3-4 hours, until the chicken is cooked through and tender.
  4. About 30 minutes before serving, stir in the heavy cream and fresh basil, if using.
  5. Once finished, shred the chicken in the sauce using two forks.
  6. Serve the creamy chicken over rice or pasta, topped with grated Parmesan cheese if desired.

Notes

You can substitute heavy cream with half-and-half or coconut cream for a lighter or dairy-free option. Make sure to avoid overcooking the chicken. Store leftovers in an airtight container for 3-4 days, or freeze for up to three months.
