- Chop the onion and mince the garlic. Set them aside.
Cooking
- Place the chicken breasts at the bottom of the slow cooker.
- Pour the crushed tomatoes over the chicken, followed by the chopped onion, minced garlic, dried basil, Italian seasoning, salt, and pepper.
- Cover the slow cooker and cook on low heat for 6-8 hours or high heat for 3-4 hours, until the chicken is cooked through and tender.
- About 30 minutes before serving, stir in the heavy cream and fresh basil, if using.
- Once finished, shred the chicken in the sauce using two forks.
- Serve the creamy chicken over rice or pasta, topped with grated Parmesan cheese if desired.
Notes
You can substitute heavy cream with half-and-half or coconut cream for a lighter or dairy-free option. Make sure to avoid overcooking the chicken. Store leftovers in an airtight container for 3-4 days, or freeze for up to three months.
