  • 1 can (15 oz) Black Beans, drained and rinsed
  • 1 can (15 oz) Corn, drained
  • 1 can (10 oz) Diced Tomatoes with Green Chiles
  • 1 cup Frozen Mixed Vegetables (such as carrots, peas, and green beans)
  • 1 packet Taco Seasoning or homemade version (no alcohol or non-halal ingredients)
  • 1 cup Shredded Cheese (Cheddar or a mix of your favorite kinds)
  • 1 medium Onion, diced
  • 2 cups Tortilla Chips, crushed
  • to taste Salt and Pepper

Preparation
  1. Begin by prepping your slow cooker. Spray it lightly with non-stick cooking spray or use a slow cooker liner for easy cleanup.
  2. In a large skillet over medium-high heat, cook the ground beef until browned, breaking it into small pieces. Drain any excess fat.
  3. In the slow cooker, add the browned beef, black beans, corn, diced tomatoes (with their juices), mixed vegetables, taco seasoning, onion, salt, and pepper. Stir well to combine.
  4. Top the mixture with crushed tortilla chips and sprinkle shredded cheese over the top.
  5. Cover and cook on low for 4 to 6 hours or on high for about 2 to 3 hours, until the components are heated through and the flavors meld beautifully.
