  • 1 bell pepper, sliced
  • 1 package (9 ounces) frozen cheese tortellini
  • 2 cups beef broth
  • 1 cup provolone cheese, shredded Add just before serving.

Preparation
  1. Begin by slicing the beef steak into thin strips to allow for tender bites after slow cooking.
  2. Slice your onion and bell pepper to add sweetness and brightness.
Cooking
  1. Place the sliced beef at the bottom of your slow cooker and add the sliced onion and bell pepper on top.
  2. Pour in 2 cups of beef broth for depth of flavor.
  3. Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours until the beef is tender.
  4. In the last 15 minutes of cooking, add the frozen tortellini to soak up the flavors.
  5. Stir in the shredded provolone cheese just before serving, allowing it to melt.
  6. Taste and adjust with salt and pepper as needed.
  7. Ladle into bowls and serve with your favorite toppings.

Consider adding more veggies like mushrooms or spinach for extra nutrition. Store leftovers in an airtight container for up to 3-4 days or freeze without cheese.
