  • 3-4 pounds pork roast (shoulder or loin works best)
  • 1 cup balsamic vinegar
  • 1/4 cup honey
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon dried rosemary (or fresh if available)
  • Salt and pepper to taste

Method
 

Preparation
  1. Pat the pork roast dry with paper towels to help the seasoning stick better. Sprinkle generously with salt and pepper.
  2. In a small bowl, whisk together the balsamic vinegar, honey, minced garlic, olive oil, and rosemary until well blended.
  3. If desired, sear the pork roast in a hot skillet on each side for a couple of minutes until browned for extra flavor.
  4. Place the pork roast in the slow cooker and pour the balsamic glaze over it, ensuring every inch of the meat is coated.
  5. Cover and cook on low for 6-8 hours or until the meat is fork-tender.
  6. Once cooked, shred the pork using two forks and mix it back into the glaze. Serve warm with your favorite sides.

Notes

For intense flavor, marinate the pork in the balsamic glaze overnight. If balsamic vinegar isn’t available, apple cider vinegar is a great alternative. Check for doneness around the 6-hour mark to avoid overcooking.
