Ingredients
  

Shrimp Preparation
  • 1 lb fresh shrimp, peeled and deveined Use the freshest shrimp available.
  • 1/2 cup fresh lime juice (about 4-5 limes) Provides acidity to 'cook' the shrimp.
Vegetables and Seasoning
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup diced cucumber
  • 1/4 cup chopped fresh cilantro
  • 1 unit jalapeño, seeded and finely chopped (optional) Add for heat.
  • to taste Salt and pepper
Serving
  • tortilla chips or crackers for serving Perfect for adding crunch.

Method
 

Preparation
  1. Boil water in a pot and add the shrimp. Cook for about 2-3 minutes or until the shrimp turns pink and opaque. Drain and let the shrimp cool before dicing them into bite-sized pieces.
  2. In a medium bowl, combine diced shrimp and lime juice. Make sure every piece is well-coated. Cover the bowl with plastic wrap and refrigerate for 15 minutes.
  3. Once marinated, remove the bowl from the fridge. Add diced tomatoes, red onion, cucumber, and jalapeño to the shrimp mixture. Stir gently to combine.
  4. Add chopped cilantro and season the mixture generously with salt and pepper. Stir again to combine all the flavors.
  5. Serve the Sizzling Easy Shrimp Ceviche chilled, alongside tortilla chips or crackers for that perfect crunch!

Notes

If you have leftovers, store them in an airtight container in the refrigerator. Enjoy within 24 hours for the best flavor and texture. Ceviche is best enjoyed cold.
