Preparation
- Boil water in a pot and add the shrimp. Cook for about 2-3 minutes or until the shrimp turns pink and opaque. Drain and let the shrimp cool before dicing them into bite-sized pieces.
- In a medium bowl, combine diced shrimp and lime juice. Make sure every piece is well-coated. Cover the bowl with plastic wrap and refrigerate for 15 minutes.
- Once marinated, remove the bowl from the fridge. Add diced tomatoes, red onion, cucumber, and jalapeño to the shrimp mixture. Stir gently to combine.
- Add chopped cilantro and season the mixture generously with salt and pepper. Stir again to combine all the flavors.
