Preparation
- Rinse and pat the shrimp dry, then season with salt and pepper.
- In a large skillet, heat the olive oil over medium-high heat.
Cooking
- Add the shrimp and cook until they are pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the garlic and sauté for about 30 seconds until fragrant.
- Pour in the heavy cream, and stir in the sun-dried tomatoes and Italian seasoning. Let it simmer for a minute.
- Toss in the fresh spinach until wilted, which will take about 1-2 minutes.
- Return the cooked shrimp to the skillet and toss to coat in the creamy sauce. Cook for an additional 2 minutes to heat everything through.
- Garnish with fresh basil and serve with grated Parmesan cheese, if desired.

To ensure perfect results, don’t overcook the shrimp, adjust the creaminess by adding broth if needed, and opt for fresh ingredients.
