- In a large pot, heat the olive oil over medium heat. Add the diced onion, celery, and carrots. Sauté until the vegetables are softened, about 5-7 minutes.
- Stir in the minced garlic and sauté for another minute.
- Pour in the rinsed lentils and the vegetable broth. Add the thyme, bay leaf, salt, and pepper. Stir well.
- Increase the heat to high until the mixture reaches a boil, then reduce the heat to low to let it simmer.
- Allow the soup to simmer for about 25-30 minutes, or until the lentils are tender. If using spinach, stir it in during the last 5 minutes of cooking.
- Taste and adjust seasoning as needed. Remove the bay leaf before serving.
- Ladle the soup into bowls and garnish with fresh herbs or a squeeze of lemon.
Notes
This soup stores beautifully! It lasts about 4-5 days in the fridge or can be frozen for longer storage. When reheating, thaw overnight in the refrigerator and warm on the stove.
