Preparation
  1. Start by washing and drying the arugula thoroughly. Thinly slice the apple and chop the walnuts. Crumble the feta cheese if it’s not already crumbled.
Mixing the Dressing
  1. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Adjust to taste—if you prefer a zestier flavor, add a little more lemon juice.
Combining the Salad
  1. In a large salad bowl, add the arugula, apple slices, walnuts, and feta cheese. Drizzle the dressing over the top.

Notes
