  • 4 cups fresh arugula, rinsed and dried
  • 2 medium-sized apples, cored and thinly sliced (choose your favorite like Granny Smith or Honeycrisp)
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • to taste salt
  • to taste pepper
  • 1/2 cup walnuts, chopped (optional) Can be substituted with toasted almonds
  • 1/2 cup feta cheese, crumbled (optional)

Method
 

Preparation
  1. Rinse the arugula thoroughly in cold water and allow it to dry.
  2. Core the apples and slice them thinly, leaving the skin on if you prefer a little crunch.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  4. In a large bowl, add the arugula and top it with the apple slices. Drizzle the dressing over it and toss gently to combine.
  5. If using, add walnuts or feta cheese on top and toss lightly again.
  6. Serve the salad immediately to enjoy its textures and flavors.

Notes

Dress the salad right before serving to avoid sogginess. Store leftovers in an airtight container in the refrigerator for up to 2 days. For best taste, consume fresh within 24 hours.
