- In a bowl, combine the olive oil, lemon juice, minced garlic, paprika, cumin, salt, and pepper. Add the shrimp and toss well to coat. Let it marinate for at least 15 minutes.
- While the shrimp marinates, chop your bell pepper, red onion, and cherry tomatoes into bite-sized pieces.
- Take your skewers and alternate threading the shrimp and the prepared vegetables.
Cooking
- Preheat your grill to medium-high. If using wooden skewers, soak them in water for about 30 minutes.
- Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the shrimp turns pink and is opaque, and the veggies are tender.
- Once done, remove from heat, garnish with fresh parsley, and serve immediately.
Notes
For a vegetarian option, substitute shrimp with marinated tofu or halloumi cheese. Overcooking shrimp can make them tough, so be vigilant about grilling time.
