Ingredients
  

For the Marinade
  • 2 tablespoons olive oil Use Halal-compliant oil
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • to taste Salt and pepper
For the Kabobs
  • 1 pound large shrimp, peeled and deveined Use Halal-compliant shrimp
  • 1 bell pepper, cut into chunks
  • 1 medium red onion, cut into chunks
  • 8 cherry tomatoes
  • to taste Fresh parsley (for garnish)

Method
 

Preparation
  1. In a bowl, combine the olive oil, lemon juice, minced garlic, paprika, cumin, salt, and pepper. Add the shrimp and toss well to coat. Let it marinate for at least 15 minutes.
  2. While the shrimp marinates, chop your bell pepper, red onion, and cherry tomatoes into bite-sized pieces.
  3. Take your skewers and alternate threading the shrimp and the prepared vegetables.
Cooking
  1. Preheat your grill to medium-high. If using wooden skewers, soak them in water for about 30 minutes.
  2. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the shrimp turns pink and is opaque, and the veggies are tender.
  3. Once done, remove from heat, garnish with fresh parsley, and serve immediately.

Notes

For a vegetarian option, substitute shrimp with marinated tofu or halloumi cheese. Overcooking shrimp can make them tough, so be vigilant about grilling time.
