Ingredients
  

Main Ingredients
  • 1 pound shrimp, peeled and deveined Use fresh shrimp for best results.
  • 2 pieces ripe avocados, diced Make sure they are ripe.
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped For garnish.
Dressing
  • 2 tablespoons olive oil
  • 2 tablespoons juice of limes About 2 limes.
  • Salt and pepper to taste

Method
 

Cooking the Shrimp
  1. Heat a tablespoon of olive oil in a skillet over medium heat.
  2. Add the shrimp and cook for about 2-3 minutes on each side until they turn pink and opaque.
  3. Remove from heat and set aside to cool.
Prepare Salad
  1. In a large bowl, combine the diced avocados, halved cherry tomatoes, and chopped red onion.
  2. Once the shrimp have cooled, add them to the bowl with the other vegetables.
Mix Dressing
  1. In a small bowl, whisk together the lime juice, a tablespoon of olive oil, salt, and pepper.
Toss Salad
  1. Pour the dressing over the salad mixture and gently toss to combine, being careful not to mash the avocado.
Serve
  1. Finish by sprinkling fresh cilantro on top. Enjoy immediately!

Notes

Use fresh ingredients for the best taste. Customize with additional vegetables or herbs as desired. Store leftover salad in an airtight container for up to 24 hours, storing dressing separately if possible.
