  • 2-3 Bell peppers (any color, sliced)
  • 2 Onions (sliced)
Seasoning
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • ½ teaspoon Pepper
  • 1 teaspoon Italian seasoning

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Slice the bell peppers and onions into strips and place them in a bowl with the sausages.
  3. Drizzle olive oil over the ingredients, then sprinkle in salt, pepper, and Italian seasoning. Toss until well coated.
  4. Pour the mixture onto a lined baking sheet and spread it out in a single layer.
Cooking
  1. Roast in the oven for 25-30 minutes or until the sausages are browned and cooked through and the vegetables are tender.
  2. Carefully remove the sheet pan from the oven and serve hot.

Notes

Consider ingredient substitutions with chicken sausages or additional vegetables. For more caramelization, extend roasting time, but keep an eye to avoid burning. Leftovers can be stored in an airtight container for up to 3 days or frozen for about 3 months.
