Preparation
- Preheat the oven to 400°F (200°C).
- Slice the red and yellow bell peppers and onion into thin strips.
- On a large baking sheet, arrange the sliced vegetables and place the sausage links among them.
- Drizzle the olive oil over everything. Sprinkle the Italian seasoning, salt, and pepper all around. Toss gently to combine.
- Place the sheet pan in the preheated oven and roast for 30-35 minutes, stirring halfway through.
- Check for doneness: sausages should reach an internal temperature of 165°F (74°C), and vegetables should be tender and caramelized.
- Remove from the oven and let it cool for a couple of minutes before serving.
Notes
Feel free to substitute Italian sausage with chicken sausage or a vegetarian option. Ensure that any chosen sausage is Halal-certified. Cut vegetables uniformly for even cooking. Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to 3 months.
