  • 1 pound Italian sausage (Halal-compliant)
  • 1 piece red bell pepper, sliced
  • 1 piece yellow bell pepper, sliced
  • 1 piece onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • to taste salt and pepper

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Slice the red and yellow bell peppers and onion into thin strips.
  3. On a large baking sheet, arrange the sliced vegetables and place the sausage links among them.
  4. Drizzle the olive oil over everything. Sprinkle the Italian seasoning, salt, and pepper all around. Toss gently to combine.
  5. Place the sheet pan in the preheated oven and roast for 30-35 minutes, stirring halfway through.
  6. Check for doneness: sausages should reach an internal temperature of 165°F (74°C), and vegetables should be tender and caramelized.
  7. Remove from the oven and let it cool for a couple of minutes before serving.

Notes

Feel free to substitute Italian sausage with chicken sausage or a vegetarian option. Ensure that any chosen sausage is Halal-certified. Cut vegetables uniformly for even cooking. Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to 3 months.
