- Preheat your oven to 400°F (200°C).
- Slice the bell peppers and onion evenly.
- In a large bowl, combine sliced peppers, onion, halal sausage, olive oil, salt, pepper, and Italian seasoning. Toss until coated.
- Spread the mixture onto a large sheet pan without overlapping the sausages.
- Roast in the preheated oven for about 20-25 minutes until sausage reaches 160°F and veggies are golden brown.
- Let it cool for a few minutes, then serve on a platter and garnish with parsley if desired.
Notes
For meat substitutions, try chicken or turkey sausage. You can add zucchini, mushrooms, or carrots for extra nutrition. Use parchment paper for easy clean-up.
