  • 1 red and 1 green bell peppers, sliced
  • 2 medium onions, sliced
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon Italian seasoning, optional

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine your sliced bell peppers and onions. Toss them in olive oil, minced garlic, salt, and pepper until well coated.
  3. Arrange the halal sausages on a large baking sheet and surround them with the vegetable mixture, ensuring they are spread out for even cooking.
  4. If using Italian seasoning, sprinkle it evenly over the sausages and veggies.
Cooking
  1. Place the sheet pan in the oven and roast for 25-30 minutes, flipping the sausages and stirring the vegetables halfway through.
  2. Check for doneness: sausages should be golden and cooked through, and veggies should be tender and caramelized.
Serving
  1. Take the sheet pan out of the oven, and serve your dish hot.

Notes

Feel free to use alternative halal sausages like chicken or turkey. You can also experiment with other vegetables like zucchini, mushrooms, or cherry tomatoes. Store leftovers in an airtight container for 3-4 days or freeze for up to 2 months. Reheat at 350°F (175°C) for 15-20 minutes.
