Preparation
- Preheat your oven to 400°F (200°C).
- Slice the sausages into bite-sized pieces and cut the bell peppers and onions into strips.
- In a large mixing bowl, toss the sausages, bell peppers, and onions with olive oil, garlic powder, Italian seasoning, salt, and pepper until evenly coated.
- Spread the mixture evenly on a large sheet pan.
Cooking
- Place the sheet pan in the oven and roast for about 25-30 minutes, or until the sausages are golden and the vegetables are tender.
- Stir halfway through cooking for even roasting.
Serving
- Once done, remove from the oven, let cool slightly, and serve warm.
Notes
Add balsamic glaze or fresh parsley for extra flavor. Store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for 2-3 months.
