Ingredients
  

For the Scandinavian berry mayo
  • ½ cup Scandinavian berry mayo (made from mayonnaise, ¼ cup lingonberries or cloudberries, and a pinch of salt and pepper)
For the burgers
  • 1 pound ground beef or plant-based burger patties
  • 1 cup arugula
  • 4 pieces burger buns
  • to taste salt and pepper

Method
 

Preparation
  1. Prepare the Scandinavian Berry Mayo: In a small mixing bowl, combine the mayonnaise with lingonberries (or cloudberries), and add a pinch of salt and pepper. Mix well and set aside.
  2. Season the Patties: In a bowl, take the ground beef (or plant-based patties) and season with salt and pepper. Form them into 4 equal patties, ensuring they’re slightly larger than your burger buns to account for shrinkage while cooking.
Cooking
  1. Cook the Patties: Preheat a skillet over medium-high heat. Once hot, add the burger patties and cook for about 5-7 minutes on each side, or until they reach your desired doneness.
  2. Toast the Buns: While the patties are cooking, you can toast the burger buns lightly in the skillet for an extra crunch.
Assembly
  1. Assemble Your Burgers: First, spread a generous amount of the Scandinavian berry mayo on the bottom half of each bun. Place the cooked patty on top, add a handful of arugula and any other optional toppings you desire, and finish with the top half of the bun.
Serving

Notes

For a Halal-friendly option, choose only certified Halal beef or plant-based patties. You can also substitute the arugula with other greens like spinach or kale for a different twist.
