Ingredients
  

For the chicken marinade
  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 tablespoons sweet chili sauce
  • 2 tablespoons soy sauce (or low-sodium soy sauce)
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced (optional)
For cooking
  • 1 tablespoon vegetable oil
  • 1 piece bell pepper, sliced (any color)
  • 1 cup snap peas or snow peas
  • 2 stalks green onions, sliced
  • Salt and pepper to taste
  • Cooked rice or quinoa for serving

Preparation
  1. In a bowl, mix the cut chicken pieces with the sweet chili sauce, soy sauce, minced garlic, and ginger (if using). Allow it to marinate for about 10 minutes.
Cooking
  1. In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.
  2. Add the marinated chicken to the hot pan. Stir-fry for about 5-7 minutes, or until the chicken is browned and cooked through.
  3. Toss in the sliced bell pepper and snap peas. Stir-fry for an additional 3-4 minutes until the veggies are tender-crisp.
  4. Season with salt and pepper to taste. Serve hot over cooked rice or quinoa, garnished with green onions.

Notes

Feel free to swap in your favorite vegetables or whatever’s in season! For more heat, add sriracha sauce or red pepper flakes. For better flavor, marinate the chicken for longer if time allows.
