Preparation
  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a pan over medium heat, sauté the chopped onions until translucent, about 5 minutes. Add crumbled sausage and cook until golden brown, taking around 5-7 minutes.
  3. In a large bowl, whisk together eggs and milk until well combined. Season with salt and pepper to taste.
  4. Add the sautéed sausage and onion mixture to the egg mixture. Stir in the shredded cheddar cheese until evenly mixed.
  5. Pour the mixture into the greased muffin tin, filling each cup about three-quarters full.
  6. Bake in the preheated oven for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted comes out clean.
  7. Let muffins cool slightly in the pan before transferring them to a wire rack. Enjoy them warm or at room temperature.

Notes

These muffins are great for meal prep and can be served alongside fruit salad or crispy hash browns. For added flavor, try serving with cranberry sauce or hot sauce.
