Method
Marinating the Chops
- In a mixing bowl, combine brown sugar, soy sauce, garlic, Dijon mustard, and black pepper. Place your pork chops in a shallow dish and pour the marinade over them. Let them soak for at least 15 minutes.
Cooking the Chops
- In a skillet, heat olive oil and butter over medium-high heat until the butter melts and starts to bubble gently.
- Once the pan is hot, add the marinated pork chops. Cook for about 5-7 minutes on each side or until they reach an internal temperature of 145°F (63°C) with a nice glaze formed on the exterior.
Finalizing
- As the chops cook, use the leftover marinade to baste the pork for extra flavor.
- When ready, remove them from the heat, let them rest for a few minutes, then serve with your desired sides.
Notes
Store leftovers in an airtight container for up to 3 days in the refrigerator or freeze for up to three months. Reheat in the microwave or on low heat in a pan, adding a splash of water or more marinade to restore moisture and flavor.
