  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

  • 1/4 cup unsalted butter, cold and cubed Cold butter creates flaky layers.
  • 1 cup cheese (cheddar or your favorite), shredded Feel free to mix different cheeses.
  • 1 tablespoon fresh herbs (e.g., rosemary, thyme, or chives), finely chopped Experiment with flavors.
  • 3/4 cup milk
  • 1 egg for brushing (optional) Beaten egg gives a golden finish.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the flour, baking powder, and salt. Stir well to ensure everything is evenly mixed.
  3. Add the cold cubed butter into the flour mixture. Using your fingers or a pastry cutter, mix until the mixture resembles coarse crumbs.
  4. Stir in the shredded cheese and chopped herbs, mixing gently to combine.
  5. Pour in the milk gradually and mix until just combined. Don’t overwork the dough; it should be slightly sticky.
  6. Turn the dough onto a floured surface and gently knead it a few times. Pat it into a circle about 1-inch thick. Cut into wedges or use a cookie cutter for desired shapes.
  7. If desired, beat the egg and brush the top of each scone for a golden finish.
  8. Place the scones on the prepared baking sheet and bake for 15-20 minutes, or until golden brown.
  9. Allow to cool slightly before digging in. Enjoy warm!

Notes

These scones can be served with salad, soup or various spreads. Keep them in an airtight container at room temperature for up to 2 days or freeze them for up to a month.
