Preparation
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the halved or quartered potatoes with olive oil, minced garlic, dried herbs, salt, and pepper until well coated.
Roasting
- Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast the potatoes in the preheated oven for about 25-30 minutes or until golden brown and crispy, stirring halfway through.
Serving
- Once done, remove from the oven, garnish with freshly chopped parsley, and enjoy while warm.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. To reheat, place in the oven at 350°F (175°C) for about 10-15 minutes.
