Ingredients
  

Potatoes Preparation
  • 2 pounds baby potatoes, halved or quartered For optimal flavor, baby or Yukon Gold potatoes work best.
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons dried Italian herbs Or your favorite herb blend.
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the halved or quartered potatoes with olive oil, minced garlic, dried herbs, salt, and pepper until well coated.
Roasting
  1. Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
  2. Roast the potatoes in the preheated oven for about 25-30 minutes or until golden brown and crispy, stirring halfway through.
Serving
  1. Once done, remove from the oven, garnish with freshly chopped parsley, and enjoy while warm.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. To reheat, place in the oven at 350°F (175°C) for about 10-15 minutes.
